Watermelon Granita
 

One of the things I enjoy most about the summer is the abundance of fresh local fruits and vegetables. Farmer’s markets are flowing with sweet smells of strawberries, beautiful lush greens and flavourful vegetables.

Certain foods really have a connection to the hot summer days, one of them being watermelon. So sweet and refreshing. Watermelons are also loaded with antioxidants and nutrients. Because it has a higher water content and lower calorie content than many other fruits, it delivers more nutrients per calorie. It is packed with some of the most important antioxidants, like lycopene, the red carotenoid pigment that also gives tomatoes their red colour.
For optimal digestion, watermelon should be eaten away from other foods.

Watermelon Granita

Watermelon Granita

4 cups watermelon, cubed and seeded
1 lemon, juiced
2 Tbsp pomegranate powder (optional)
1 Tbsp maple syrup

How to make:

Cut watermelon into big chunks, about 1 inch. Add all ingredients into a blender and buzz until smooth. Pour mixture into a baking dish and put into freezer. It takes about 4 hours to freeze but it’s best to scrape and mix the granite with a fork every 1-2 hours.
Makes 2 servings

Watermelon Mint Lime Margarita

Summertime Watermelon Lush

2 cups watermelon, seeded and cubed
4 mint leaves, sliced
1 lime, juiced
4 ice cubes

How to make:
Combine all ingredients into a blender and buzz until smooth.
Makes 1 serving. Add tequila to make a margarita!
