Hey there health seeker,
Lately, I have been all riled up about the misconception of what the true meaning of health actually is. It breaks my heart a little each time when people put off being healthy simply because they fear the restrictions and commitment that they think it takes to stay healthy. While it’s true that it does require attention to choose healthy alternatives and to practice self control, the real hurdle that stands in the way of you and health is your perception.If you are able to bring your attention to everything that you CAN have, instead of something you are afraid to give up or CANNOT have, you will open up a world of opportunity and possibility for yourself. Ask yourself this question, “What’s standing in the way of you and your happiness?” What exactly are you afraid of giving up? Or perhaps you, or your ego, have convinced yourself that you are incapable or undeserving of true health? If you have struggled for years with health issues, weight gain or depression, it’s time to ask yourself these questions and think beyond dieting.
The best thing about being a health educator, is to witness the transformation that happens to people when they have made that subtle switch in their thinking process, and the amazing results that follow. True health does not mean you have to eat kale everyday (which wouldn’t even be healthy if you ate it every single day) or cutting your favourite foods out of your life forever. It’s about finding a healthy balance that works for your lifestyle. Coming back to real food, being able to eat intuitively, and making peace with your plate. For example, if you have fond memories of your childhood while having a freshly baked cookie, then you should be able to have a cookie. If gluten causes you bloating and discomfort, make it gluten-free. Skip the unhealthy butter substitutes and refined sugar. But have your cookie if you want a cookie, because everyone deserves a good cookie. We also deserve to not feel guilty or bloated or hypoglycemic after eating a cookie. The recipe below will actually help to boost your metabolism and still satisfy your cookie craving without the risk over indulging.
Quinoa Coconut Flour Chocolate Chip Cookies
Making some healthy substitutions and adding high protein ingredients like quinoa and coconut flour will help to keep your blood sugar in check, so that you are not left with uncontrollable cravings. The fibre and healthy fats from coconut oil and chia seeds will actually help to speed up your metabolism! Yeay!
When shopping for chocolate chips, look for high quality brands that are gluten-free and don’t contain hydrogenated fats and GMO soy. (I used Camino brand)
Dry:
- 2 cups quinoa, cooked
- 1 cup brown rice flour
- ½ cup coconut flour
- 1 tsp baking soda
- 1 tsp aluminum free baking powder
- ½ cup coconut sugar
- ¼ tsp sea salt
Wet:
- 2 ripe bananas
- 2 tsp vanilla extract
- 2 Tbsp chia seeds + ¼ cup water
- 1 egg
- ⅓ cup coconut oil, melted
- 1 cup chocolate chips
How to make:
Soak chia seeds in ¼ cup filtered water for 10 minutes.
Preheat oven to 400°F
In a large bowl, mix together dry ingredients – brown rice flour, coconut flour, baking soda, baking powder, coconut sugar, and sea salt. Once mixed, add chocolate chips.
In another bowl, mash bananas. Whisk in egg and melted coconut oil. You can melt coconut oil in the oven for a few minutes. Mix in vanilla extract, soaked chia seeds and cooked quinoa.
Combine wet and dry ingredients and mix well.
Line a baking sheet with unbleached parchment paper. Using a large tablespoon sized scoop, form little balls between your palms, then press flat on the baking sheet.
Bake for 25 minutes. Allow to cool on a baking rack. Don’t store these cookies in an airtight container, they will go soft!
Makes 38 little cookies. Please allow yourself to enjoy, without guilt.
