High Protein Bean Dip with Eversio Wellness Mushrooms

This is an alternative to hummus, made with super creamy Cannellini beans & some helpful ingredients for added blood sugar balance.

Beans are an excellent way to support a healthy blood sugar because they contain protein & resistant starch fibre, which helps slow down the digestion and absorption of carbohydrates, preventing rapid spikes in blood sugar levels after meals. We added an extra source of protein and healthy fats to the dip with the addition of hemp seeds.

Creamy High Protein Cannellini Dip with 4 Mushroom Blend

1.5 cups cooked cannellini beans, rinsed (roughly 1 14oz can)

¼ cup hemp seeds

3 Tbsp olive oil

½ lemon, juice + zest (equals 3 Tbsp juice, ½ tsp zest)

1 garlic clove, chopped

½ cup fresh basil, sliced (10-12 leaves)

½ tsp Eversion Wellness 4 Mushroom Blend powder

¼ tsp sea salt

How to make:

If you can’t find cannellini beans, substitute with another white bean or chickpeas.

Prepare your ingredients and add them to the food processor. Use ½ the olive oil at a time. Blend, stopping the food processor to scrape the sides with a spatula if needed. Add the rest of the olive oil and blend until smooth and fluffy.

Enjoy with your favourite veggies like sweet peas, radishes, cucumber, carrots or thinly sliced beets.

Makes 1.5 cups.
