If you love the flavour burst of fresh pestos, you are going to LOVE this dairy free and mineral rich version made with fragrant basil and creamy pistachos.
Health benefits:

I would suggest doubling this recipe up as it makes about 2/3 of a cup!

- 1 cup Fresh Basil packed
- 1/4 cup pistachios
- 1 clove large garlic roughly chopped
- 2 Tbsp lemon juice
- 1 tsp lemon zest
- 1/4 tsp Himalayan salt
- 1/4 cup Extra Virgin Olive Oil
Ingredients

- Roughly chopped basil and garlic add all ingredients in to a blender, except the olive oil. Pulse to mix slowly, then stream in olive oil.
Store in an airtight container in the fridge for up to 4 days.
