Ingredients
- 1.5 cups rolled oats
- 1/2 cup of mixed nuts chopped finely I used walnuts and almonds
- 2 Tbsp Chia seeds
- 1/2 tsp cinnamon
- 1/8 tsp cardamom
- 1/8 tsp Sea Salt
- 5 Tbsp coconut oil melted
- 1/4 cup pure maple syrup
Topping
- 2 cups plain yogurt use greek or coconut based yogurt for dairy free option
- 2 Tbsp maple syrup or honey
- 1 tsp vanilla
- 1 cup mixed berries I used fresh raspberries and blueberries

Instructions
- Preheat oven to 325F. Line a muffin pan with unbleached parchment paper cups.
- In a large bowl, mix together all dry ingredients.
- Add melted coconut oil & maple syrup. Mix well.
- Add roughly 3 Tbsp of batter per muffin cup, pressing the dough up to the sides and flat bottom.
- Bake for 15-17 minutes.
- Remove from oven and press any puffed up bottoms of muffins down. Let granola cups cool completely.
- Mix together topping ingredients ~ yogurt, vanilla, and maple syrup.
- Add roughly 2 Tbsp of yogurt per cup, then top with fresh berries.
- Serve immediately after adding yogurt. Enjoy!
