Lemon zest adds a beautifully fresh flavour to balance out the earthy oregano and spicy garlic.

- 1/2 cup Extra Virgin Olive Oil
- 1/8 cup Raw Apple Cider Vinegar
- 1/4 tsp Himalayan salt
- 1/2 cup fresh oregano chopped
- 1 large garlic clove chopped
- 1 tsp raw unpasteurized honey optional
- 1 Tbsp Tbsp lemon zest
- 1 Tbsp Tbsp lemon juice

- Add all ingredients to a blender and buzz until smooth.
Keeps in the fridge for 1 week. You can use this as a dressing or marinade for fish, tofu, or chicken.
