These fun little bites will give you the satisfaction of eating little bite sized crostini, without the grains! You can top these little rounds with whatever you like. I have use both, dairy and non-dairy cheese (the Garlic & Fine Herbs by Fauxmagerie), as a topper and they both turned out wonderful.
Pomegranates lend a fun tart and fresh flavour and they are loaded with antioxidants to protect your cells from free radical damage. Compounds like Punicalagins in pomegranates, which are potent antioxidants, have been found to be 3x more powerful than red wine and green tea! (Source).
Pomegranates are know to help reduce inflammation in the body which helps to relieve joint and arthritic pain, fight against certain cancers (breast and prostate), and may help to lower blood pressure. (Source)

- 2 long & skinny sweet potatoes sliced to 1cm thickness
- 2 Tbsp Avocado Oil
- 1/2 cup pomegranate seeds
- 1/2 cup soft cheese herbed cashew cheese, goat, or boursin cheese
- 1/4 cup pumpkin seeds

- Place baking racks in the upper and lower thirds of the oven and preheat the oven to 425 degrees Line two rimmed baking sheets with unbleached parchment paper. Brush the sheets with 1/2 tablespoon avocado oil each.
- Arrange the slices in a single layer on the oiled baking sheets, then brush the tops with the remaining 1 tablespoon avocado oil. Sprinkle with salt and black pepper. Bake for 15 to 20 minutes, until golden brown underneath, rotating the pans 180 degrees and changing their positions on the upper/lower racks halfway through. Remove the pans from the oven, flip the slices over, then roast for an additional 5 to 8 minutes, until tender.
- After removing the sweet potatoes from the oven, use a knife to spread roughly 3/4 tsp of cheese on each slice as you place them on your serving dish. Sprinkle with pomegranate and pumpkin seeds and any fresh herbs you might have around as garnish.
Try to serve these immediately, but they taste totally fine after being around for 2-3 hours as well.
