I love summer. I love the sun, the warmth, and of course the abundance of beautiful fruits and veggies. The best part is that you can go to local farmer’s markets and find some pretty amazing and unique produce, like watermelon radishes and little sweet salad turnips.Shopping at farmer’s markets is a wonderful experience. There is usually a local band playing music, neat little craft booths and amazing artists, fresh baked (healthy) goodies, and clean soaps, creams and cosmetics. The food is all from surrounding farms, which also means that it is seasonal and at it’s most nutritious state.
Why eat local?
- Local seasonal food is the most nutritious and delicious
- to reduce the energy (and associated CO2 emissions) needed to grow and transport the food
- to support the local economy and farmers
Lettuce, Organic Heirloom Tomatoes, Farmer’s Market Salad and Radishes |
Simple July Farmer’s Market Salad with Fresh Herbs
1 head of lettuce
8-10 small tomatoes, cut in half
4-5 radishes, slice thinly
4-5 green onions, chopped
4-5 fresh basil leaves, chopped
Small handful fresh dill, chopped
Small handful fresh dill, chopped
Dash of olive oil
Splash of lemon
How to make:
Wash the lettuce well, dry and tear into little bite sized pieces. Toss in chopped herbs, tomatoes, radishes, olive oil, and lemon juice. Toss well.
Makes 2 servings
6 stalks of rainbow swiss chard
4 carrots
2 apples
1 lime
How to make:
Wash and cut the vegetables into chunks big enough for your juices. Core apple and cut lime in half. Juice away!
