Getting your dose of greens will significantly improve your health and energy levels for so many reasons. Not only are they incredibly nutrient dense, but they also have amazing detoxifying properties.
If you are feeling like you are sick of greens, try a different type of green (Chard, mustard greens, sorrel, spinach, romaine, etc) or prepare it in a creative way! (Recipe ideas here)
Here are the top reasons to get more greens into your diet: They are loaded with fibre, calcium, magnesium, vitamin C, antioxidant, phytonutrients and chlorophyll. All these nutrients work in synergy to:

Get Your Summer Glow On Kale Salad
This is a quick simple main salad or a couple of side dishes to add a powerful dose of nutrients to your meal. Once you try a massaged kale salad, you’ll never look back;) Adding healthy fats like avocado will give you that extra glow and increase your satiety by shutting off that hunger hormone. A dose of spice from ancho chili or cayenne will boost your metabolism!
- 5-6 Green Kale Leaves
- 1/2 cup red cabbage
- 1 small carrot
- 1/2 small zucchini
- 1/2 avocado
- Handful fresh dill or basil
- 1 green onion sprig
- 2 Tbsp camelina or olive oil
- 2 Tbsp + 1/4 tsp lemon zest
- Pinch sea salt
- Pinch ancho chili or cayenne pepper
How to make:
Remove tough stems from kale. Cut into thin strips. Slice cabbage thinly and add to a big bowl along with the kale. Sprinkle with sea salt and olive oil. Massage with your hands until salad becomes limp and reduces to about half the size.
Zest and juice lemon and mix into salad.
Shred carrot, zucchini and chop herbs and green onion. Add to salad and mix. Slice avocado while still in the shell and then scoop out with a spoon to top the salad. Sprinkle with ancho chili or cayenne pepper.
Makes 1 main dish or 2-4 side dishes.
