If you read my blog at all, you know that I LOVE my pancakes and I often share many different recipe creations here. (Check out the recipe page)
I also have a bit of a love hate relationship with coconut flour, I have shared many tips on how to use this healthy, yet stubborn flour here. The secret to baking or cooking with coconut flour is definitely ~ less is more!
Today I want to share one of the most easiest and delicious recipe. These pancakes are super quick to whip up in your blender and only have 4 ingredients!
Deeelish Coconut Banana Pancakes
4 organic free-range eggs
2 bananas
2 Tbsp coconut flour
1 Tbsp coconut oil (plus extra for cooking)
1 tsp vanilla powder or vanilla extract
1/4 tsp sea salt
How to make:
Combine all ingredients into a blender and buzz until smooth.
Heat a pan over medium heat and use 1 tsp of coconut oil per batch when cooking your pancakes. Pour about 3 Tbsp of batter per pancake and cook until bubbles start to form, then flip and cook another minute or two.
Serve with fresh fruit and pure maple syrup, or my Blueberry Syrup!
Makes 18 little pancakes or 3 servings.
