I recently ventured to Costa Rica to co-host a health retreat (read all about the adventures here). My responsibilities included designing the meal plan, teaching yoga and some mini nutrition workshops.
When designing the holistic meal plan I really had to consider three very important factors: everyone needs to be fully satisfied and ready for an energetic day, everyone has to love the recipes, and the recipe has to be super easy and quick to make.
And the Overnight Oat I created for the breakfasts were a huge success on all levels!
I wanted to share the recipe with you because I know you have the same goals for you breakfasts. You want energy, satiety, and simple deliciousness:)
Overnight Coconut Oats with Hemp and Fresh Fruit
1/2 cup steel cut oats
1/2 cup coconut milk (from can – the full fat goodness)
1/2 cup water
2 tablespoons hemp seeds
1/2 banana, mashed
¼ teaspoon pure vanilla extract
Pinch sea salt
AM Ingredients:
Pure Maple Syrup and fresh fruit
How to make:
Mix together the above ingredients in a bowl and place in fridge overnight.
In the morning, remove bowl from fridge and add your magical toppings…
Serves 1-2
Tip: Double or triple the recipe and put it into mason jars for breakfast on the go for 2-3 days.
